Meet Our Executive Chef

Hotel Viking Executive Chef Peter HamilExecutive Chef Peter Hamil joined the Hotel Viking team at the start of the year, and he has already made his mark with a variety of Chef Dinners and new menus.

“I want to appeal to our guests through food,” he says. “We focus on fresh.”

Whether that’s his signature scallop chowder, lobster tacos, a gorgeous seafood tower, or any creations incorporating fresh herbs and local produce, Chef aims to create traditional fare with a modern, upscale twist, and put a fun spin on food.

Chef Hamil has been delighting guests for over 20 years. After cutting his culinary teeth in New York, a place he still loves and visits often (especially Daniel NYC), he showcased his cuisine at resorts in Jamaica and various Caribbean islands.

Chef Hamil has a unique career path.

His accolades include cooking for the Confrerie de la Chaine des Rotisseurs at the Sandals Royal Plantation, being nominated for Chef of the Year, winning a Master Chef Award for the Jamaica Observer Food Table Talk event, and winning Silver for the BVI National Culinary Team at the Caribbean Culinary Competition.

Even with all these accolades, his demeanor is humble, easygoing and fun.

“Cooking is my life,” he says. “I’m very passionate about what I do, so I spend a lot of time perfecting the things I do, and it only gets better through time.”

“My island roots have not limited me in the wide range of cuisines that I specialize in, including signature seafood creations.”

What does he enjoy most about Newport? Lobster Boils. Chef loves bringing out the flavor of fresh seafood – which he’ll do on the Fourth of July, and then every week throughout the summer for our iconic outdoor lobster bakes.

Have you tried any of his new signature menu items?

“I love hearing feedback from our guests,” Chef says. “Our clients are great people.”

He loves to interact with guests and is no stranger to private tastings for loyal clientele, as well as customizing wedding menus for elaborate celebrations.

“As long as the customers are happy,” he says.
