New Menu At One Bellevue Features Farm and Fish To Table Cuisine

Newport, Rhode Island – 2014 – One Bellevue, Hotel Viking’s celebrated restaurant, has a menu featuring succulent seafood dishes, fresh salads and tender steaks. Developed by Executive Chef Kevin Thiele, the restaurants menu features locally grown produce with organic greens and tomatoes coming from Farm Fresh Rhode Island Market Mobile to locally caught fish guaranteed to be fresh through the Trace & Trust Fish Program. Rhode Island farmers even produce the artisanal cheeses and the restaurant grows herbs including basil, parsley, thyme, dill, cilantro and chives for summer dishes in the garden on One Bellevue’s patio. Chef Thiele develops the menu based on local and regional influences. North Atlantic calamari, Prince Edward Island mussels, Newport little neck clams are all offered as tantalizing appetizers. Soups include the lobster, scallop and shrimp clam chowder and the award-wining chili, a mouth-watering blend of pancetta, Italian sausage, beans and fresh crushed tomatoes. “Everything we create for the menu reflects the tastes and desires of our clientele. They want fresh, flavorful seafood dishes and that is the main focus of our menu,” said Chef Thiele, “We are fortunate to be located on the coast and near farms as well. Our food is fresh and the flavors really come through in the dishes.”

One Bellevue offers two main dining areas, the Salon and Garden Room, seat 60 and 40 people respectively; and One Bellevue Lounge accommodates 45 people at the bar, on comfortable club chairs, and couches, and at small tables for two or more.
