ONE BELLEVUE AT HOTEL VIKING RECEIVES ITS FIRST WINE SPECTATOR AWARD
“Award of Excellence” Designation Is a Coveted Honor
NEWPORT, RI (July 25, 2007) – One Bellevue at the Hotel Viking has received a 2007 “Award of Excellence” from Wine Spectator magazine. In its annual Restaurant Awards issue dated August 31, 2007, the most influential wine magazine in the world recognized restaurants whose wine lists offer interesting selections, are appropriate to their cuisine and appeal to a wide range of wine lovers.
Says Hotel Viking’s Director of Food and Beverage John Trudeau, “We are extremely honored and pleased to win this prestigious award for the first time. As part of our goal to firmly establish One Bellevue, an American bistro, into a destination dining venue, this recognition by Wine Spectator is particularly important to the Hotel Viking.” Trudeau continues, “There are a total of 27 restaurants in Rhode Island that won this level of award. One Bellevue shares the honor with eight other Newport restaurants.”
The criteria for choosing the “Award of Excellence” restaurant winners is that the wine lists offer a well-chosen selection of quality producers, along with a thematic match to the menu in both price and style. Usually these lists offer at least 100 selections. To complement the menus of Executive Chef Kevin Thiele featuring seasonal choices that are fresh, pristine and locally-sourced whenever possible, Trudeau has devised an accessible, yet unique wine list for hotel guests and local Rhode Island visitors alike. The list is divided into: Soft Reds, Velvety Reds, Spicy Reds, Big Reds, Sparkling Whites, Crisp Whites, Full Whites and Aromatic Whites. In addition, there are 25 Wines by the Glass offered for eight to 20 dollars per glass, carefully selected from California, France, Italy, Australia and New Zealand.
Since late 2006, there have many positive changes at One Bellevue, including: the appointment of John Trudeau as director of food and beverage; the naming of Executive Chef Kevin Thiele to his position; the hiring of Patrice Conde as restaurant general manager; and ongoing attention to hiring and training a culinary team that is committed to One Bellevue’s ever-growing success. To this end, a winning new wine and cocktails list – as well as new menus for dinner, breakfast, lunch, afternoon tea and all-day offerings – have been created.
The beverage program at One Bellevue is being strengthened and improved on an ongoing basis. Recently, One Bellevue implemented “Wine Down Thursdays” offering a small group of participants the opportunity to learn about and enjoy wines from themed tastings presented by wine experts and accompanied by small bites from Chef Thiele. And, several other wine and beverage programs are now in the planning stages.
